So, I didn’t get pork fat. But the Dutch market had straight up lard (which the fat was going to become anyways). I was really looking forward to redering me some lard … oh wellz.
Regardless, I got some pork butt cubed up and marinating in 2 tsp. allspice, 2 tsp. peppercorn, 3 cloves garlic and some cinnamon over night. I’m also making some pork stock to slow cook it in right now. Pound or so of pork bones, bouquet garni and water. Doesn’t get much simpler.
Tomorrow I will be slow cooking the pork in the stock with about a cup and a half of lard until it is falling apart.
