Sad day. The butcher and the farmers market had no a) pork fat, b) lard or c) fat back. I had to special order 3 pounds of pig fat. It should be here next Friday. Who special orders 3 pound of fat?
On the good side, I got an excellent cut of pork butt. Really nice fat there. I’m just scared it won’t be enough to cover the rillettes. Also got some fresh, whole allspice. So, I’m going to wait it out until I get my pork fat and render me some lard.
